I went together with some of my friends to a Vietnamese restaurant called Lee Kam Kee Vietnamese Restaurant. It's about 15 minutes away by train, making it a nice distance from the university. It's a cash only restaurant, but there are tons of options, from noodle dishes to rice dishes, and I absolutely loved the food. Between the 6 of us, each person's meal was only about $105 HKD, or about $13 USD. I got the shredded chicken with rice noodle soup, which is pictured here.
